Betty Cooks - Pennsylvania Dutch Funnel Cake

INGREDIENTS:

1 1/3 Cup Flour, sifted
1 TB Baking Powder
2 TB Sugar
1/8 tsp Salt
1 Qt Veggie Oil for frying
2/3 Cup Milk
1 Egg
Powdered Sugar for dusting
1 Funnel

DIRECTIONS:

1. Sift flour, sugar, salt, baking powder together in bowl.
2. Heat Oil in Frying Pan to 375 degrees F
3. Break Egg into medium bowl. Add milk and beat lightly with rotary beater.
4. Add dry ingredients and beat until smooth. Spoon into funnel.
5. Hold finger over spout of funnel. Let batter slide thru into pan, swirling into circles from center out. (3" dia.) Work close to pan so batter will not spatter. Fry until golden brown. Drown on paper towel, dust with sugar, and serve immediately.
Makes 9 - 10 cakes.

This was a recipe from my dear Mother! She also liked to add apple pie filling to the batter or when done spoon Cherry pie filling on top and spray with canned whipped cream! Yummy!
I think I will try them soon with Chocolate chips added! Be creative and enjoy!

  2. I LOVE!!! to get Funnel cake from the State Fair, but that's only once a year. Now, with this GREAT!!! recipe I can have some more often.
